Lasagna Day

Rejoice in pasta, ricotta cheese, and ground beef goodness as it is Lasagna Day! As one of the most time consuming foods to make, you better get started soon on making your Italian delight. I'm a big fan of the original, but I also enjoy vegetarian and Mexican lasagna. Anybody have any good recipes or weird variations they'd like to share?
