I am no cheese connoisseur but supposedly moldy cheese is non-toxic depending on the type of cheese. I really do not think cheese gurus are referring to the non-descript, somewhat sketchy cheeses from the corner store; when they say most molds are harmless, they mean the Roquefort, Gorgonzola, Brie and Camembert types that are actually made by mold. …I can’t believe I am even saying any mold is harmless (ICK!).
I would strongly advice that you ask the experts as to which moldy cheeses you should disregard or salvage! Go to a cheese tasting class or join a cheese Meet Up group or buy a cheese board set. If you are lactose intolerant, go to the Cheesecake Factory just because it has the word “cheese” in it or say “cheese!” if someone takes a photograph of you today. Celebrate Moldy Cheese Day as you see fit!!!
