Fresh Spinach Day

Pop-eye loved spinach, and with good reason; spinach is jam packed with vitamins, iron and calcium. Knowledge of spinach’s superior nutrient qualities has made this veggie, much to the dismay of children everywhere, a dinner table staple since the 1920s. However, despite its status as healthful there are people out there who are wary and ambivalent about the food, but today is the day these people should give spinach a second chance because today’s zany holiday is Fresh Spinach Day.

Spinach, a dark green vegetable, which means one of two things: first, it’s very healthy and that’s great, and second, eww gross. But spinach isn’t gross, especially if you know how to serve it the right way! Celebrate outrageous holiday Fresh Spinach Day by experimenting with your spinach. Try scrambled eggs Florentine (Florentine denotes food made with spinach) with feta cheese. Sauté spinach with olive oil, lemon juice, salt and pepper for a delicious mid-noon snack! Improvise; use hot sauce or garlic or whatever you prefer. Make something weird on this whacky holiday! Or, to utilize spinach to the max, have your own private Iron Chef competition with a friend, no secret but the secret ingredient of the day is SPINACH!
